1Heat oven to 360F. Drizzle broccoli with oil, and sprinkle with paprika. Roast for 40 min. until tender. Set aside but keep warm.

2Meanwhile, rinse rice and lentils. Bring to boil with twice their volume of water. Cover and reduce to a simmer for 25-30 min. Drain and rinse under cold water.

3For dressing, mix all ingredients, and pour over rice mixture while slightly warm. Then, stir in broccoli, raisins, and basil, and season to taste.


1 medium broccoli, cut into small florets

1 tbsp. olive oil

1 tbsp. smoked paprika powder

150g wild rice mix

150g green lentils

50g raisins

1 small handful basil, chopped

For dressing:

1/2 cup mint leaves, chopped

zest and juice of 1 lemon

4 tbsp. olive oil

1 tbsp. white wine vinegar
